Glaze Ingredients
  • 200gm brown sugar
  • 20gm dried mustard
  • 60ml cider vinegar
  • 60ml maple syrup
  • Whole cloves to stud
  • Pinch of all spice

Baking Instructions

Remove the ham from the fridge approx. 1 hour before you begin.

Preheat your oven to 160°C.

Combine the brown sugar, dried mustard, cider vinegar and maple syrup to make the glaze.

Make a small cut under the rind, then use your fingers to gently separate and peel it away, leaving the fat intact. Lightly score the fat in a diamond pattern and stud each diamond with a clove.

Place the ham in a large baking tray, generously glaze and add a little water to the base of the pan. Baste with the glaze and pan juices every 15–20 minutes until beautifully caramelized.

Bake until the thickest part of the ham reaches 60°C, checking with a meat thermometer without touching the bone.
